PINEAPPLE AND CILANTRO SMOOTHIE


I'm always looking for new and refreshing smoothie ideas integrating what's in season and what I have a taste for. Lately, I don't know about you, but I've been craving water-rich fruits and vegetables. A couple of items I have on hand growing in my garden at the moment include cilantro and cucumber; the other ingredients I purchased at the market.

Why cilantro? It's one of my favorite herbs and it goes really well with pineapple. It's one of the main reasons I love Thai food so much! The cilantro leaves are actually rich in calcium, iron, carotenoids and vitamin C. These are great antioxidants! Cilantro is also a great detoxifier and can help the body eliminate toxic metals. Without the heavy metals in your body, you'll be able to think more clearly! Cilantro can also destroy Salmonella bacteria - the nasty bacteria that causes food-borne illnesses.

PINEAPPLE CILANTRO SMOOTHIE INGREDIENTS

  • 1 medium sized cucumber

  • 1 medium sized sweet Lime (or regular lime)

  • 2 cups of pineapple (I use frozen organic to create a thicker smoothie)

  • Large handful of fresh cilantro

  • 1 Tablespoon of extra virgin coconut oil (a wonderful dietary fat to add to your smoothies and also helps to slow down the absorption of the fruit sugars)

  • optional: tablespoon of fresh bee pollen

INSTRUCTIONS

Blend cucumber, sweet lime, pineapple, cilantro and coconut oil in a Vitamix or high speed blender until smooth. Pour into a glass and top with a tablespoon of fresh bee pollen for an added protein boost.

Important reminder: remember to 'chew' your smoothie to enable better digestion and absorption of nutrients.
